Eustis is one of a handful of towns in Lake County that dates back to the 1870s. Eustis is named after Colonel Abraham Eustis who served in the US Army in the early nineteenth century. Several homesteaders arrived in Eustis in late 1875.

Soon, Eustis became the "Orange Capital of the World". There was even a research center created in the town limits to study plants and they later were pioneers in the research of hybridization of citrus.
